Fijian steamed custard buns are an unlikely surprise. Such a simple and yet wonder of a recipe. Why have I never replaced some flour with custard powder before!? Believe me these Fijian custard buns
2 cups flour
2 tsp baking soda
1 tblsp custard powder
4 tblsps sugar
2 coconuts cream or 400ml canned coconut milk with 100ml water.
Add water to the base of the steamer and place over a high heat to boil. Sieve the flour and thr custard powder before mixing together all the dry ingredients. Add the coconut cream. Mix ingredients together with your hands well so they start to clump together in one ball, forming a dough. Leave in a warm place for 5 minutes.
Now pull dough apart into small handfuls without squeezing or handling it too much and add immediately to the steaming basket over the heat, leaving half their size gap between each one so they have enough room when they expand. Ensure there is enough hot water in the steamer pan and add boiling water to it if not.
Replace the lid and cook for 20 minutes. remove lid and stab the center of one of the steamed custard buns with a knife. If it is easy to remove then they are cooked. Remove the basket containing the rolls and leave to one side to cool before taking them off the steaming tray.

Cut open and dipped in or with a liberal spread of jam or custard!
